Well, I couldn't register for sparkpeople since I'm breastfeeding, so I started a journal at fitday instead.
This is what I made for dinner tonight:
Lentil and Sausage Stew
1 ¼ lbs. hot Italian turkey sausages, casings removed
1 medium onion, chopped
3 medium carrots, peeled and diced
3 ribs celery, chopped
2 cloves garlic, minced
1 c frozen sweet corn
1 ½ c lentils, rinsed and culled for stones and debris
6 c water
Kosher salt and freshly ground black pepper
Heat a large heavy bottomed pot over medium-high heat. Crumble sausages into pot and cook until no longer pink, using the back of a wooden spoon to break sausage into smaller pieces. Add onion, carrots and celery and continue cooking until onions are slightly translucent. Add garlic and cook until fragrant, about 1 minute. Add corn and lentils, and then stir in water. Bring to a boil, then reduce heat to a simmer, cover and let cook for about 2 hours, stirring occasionally. Remove lid for the last half hour of cooking to allow stew to thicken. Season to taste.

It's high in fiber, pretty low in fat, and really filling (and we like it). I'm freezing the leftovers in 1 cup portions for lunches.
