I mentioned on another post that I joined a CSA how surprised I was on the shitload of food.
I practically had to go vegan this week to make sure I did not waste anything. One veggie I was unsure how to handle was radishes, so I did a little research.
I never liked them raw, but apparently it is popular in Europe to steam them to get the bitter edge off. I took a crack at it and added a little cajun seasoning and Voila! A new side dish I plan on using again and again! DH could not stop eating them. Thankfully we have another bunch coming to us this Sunday.
Highly recommend it to give it a try. |

I like thinly sliced radishes in salads.
Do you ever get rhubarb (sp?)? I love rhubarb pie but haven't had it in years. |

Hmmm... radishes, eh? Sounds intriguing, don't know if I can float that by the family... their cheap enough, though, that I won't mind if I'm the only one eating them, lol.
Are they any good for you? |

I've never tried steaming radishes. I'll have to give that a go this summer.

Nutrition Information
Radishes eaten raw from the home garden are rich in folate (folic acid), calcium, potassium, and dietary fiber. This vegetable is not very rich in Vitamin A of B-complex vitamins but is moderately high in Vitamin C. The sodium content is also moderately high. However, radishes are low in calories, fat, and cholesterol.

My favorite radish recipe (which I would only recommend if you have a food processor with a shredding blade-- I can't imagine doing this with a box grater!)
Radish Slaw with New York Deli Dressing
From Cooking Light
In this colorful slaw, pepper radishes stand in for cabbage. The vinegar-based dressing gets a big flavor boost from mustard oil; its pungent bite enhances the radish flavor. It’s worth seeking out—look for it with the other specialty oils.
4 c shredded radishes (about 40 radishes)
2 c finely chopped yellow bell pepper
1 ½ c shredded carrot
½ c white wine vinegar
4 tsp sugar
1 tbsp chopped fresh dill
1 tbsp mustard oil or olive oil
½ tsp salt
½ tsp black pepper
Combine first 3 ingredients in a large bowl. Combine the white wine vinegar and remaining ingredients, stirring with a whisk. Drizzle dressing over slaw, toss well to combine. Serve immediately.
