Spinach and artichoke Chicken (tastes like the dip)
1 lb boneless skinless chicken
14 ounce can of artichokes drained and coarsely chopped
1 bag of shredded parmesan cheese (not the grated kind in the green shaker thing)
3/4 cup mayonnaise
1 frozen chopped spinach (cook in microwave according to directions on box)
Cooking Spray
Preheat oven to 425
Spray a 9X13 pan with cooking spray and place the 4 chicken in the pan.
Combine all other ingredients and spread evenly over chicken. Bake uncovered for 25 minutes until bubbly and slightly browned.
(I put salt, pepper, and garlic powder in the spinach mixture but the recipe I saw frist doesn't specify any seasoning.) |

Dang! That does sound good! DH hates mayo, so I will have to borrow some from a neighbor or something  |

| I am truly mayophobic. I have just gotten to the point of being able to deal with knowing it's cooked in something, lol. We had a small jar of it, but I had to substitute sour cream for half the mayo. It was ok, but I think using all may would probably work better. |

| If you want to sub the mayo, I bet yogurt would work well with this. I'll give it a try and report back. (we're on low fat patrol around here) |
